2 large onions, peeled and sliced into 1/4 inch slices
olive oil
1/2 teaspoon thyme, chopped
salt and pepper to taste
1 cup of sour cream
1 egg, lightly beaten
1 cup of cheddar cheese, grated
Preheat oven to 450°F/230°C.
Place the sliced onions in a single layer on the bottom of a greased baking dish.
Drizzle with oil and season with salt and pepper, then toast for 20 minutes.
Mix the sour cream, eggs and half of the cheese.
Spead it over the roasted onions, then sprinkle on the remaining cheese
Bake for 20 minutes, until the onions are tender, the cheese melted, and the sides are bubbling.
